How sad is it that I decided to cook and get laundry caught on the “cool” day this week. The high today is 92 with a heat index of 99. Wow, what a cool front!
Our garden has been producing some veggies (not my normal crops but still good).
One of my favorite recipes for zucchini comes from my Aunt Gloria. I have always loved her chocolate zucchini cake. She used to bake it for my birthday and then one year she gave me the recipe along with the cake for my present. I do not think my zucchini cake is as good as Aunt Gloria’s but my trusty assistant, Paige, and I decided to give it a shot on the “cool” July day.
Chocolate Zucchini Cake
Mix together:
1/2 c oleo
1/2 c oil
2 eggs
1 t vanilla
1 3/4 c sugar
In a separate bowl:
2 1/2 c flour
4 T cocoa
1/2 t cinnamon
1/2 t baking powder
1 1/2 t baking soda
Add two mixtures together and then add:
1/2 c sour milk or buttermilk (sour milk=1/2 c milk + 1/2 T vinegar)
2 c shredded zucchini
Mix well and pour into greased 9×13 pan ( I did a smaller pan and some cupcakes)
Sprinkle with chocolate chips and chopped nuts
Bake at 325 for 30 min. or longer.

I love that too π looks sooo yummy but I did not plant any zucchini in my garden…only tomatoes π looks like a trip to the farmer’s market π
